UXUA recipe - ice cream sandwhich

We make ice cream sandwhiches. This one is pretty special with a tapioca shell, cream & cashew with caramel ice cream. All homemade of course, and you can try it at home

To make the CREAMY CASHEW & CARAMEL ICE CREAM SANDWHICH, its really a 3-part process


1) MAKE VANILLA ICE CREAM

INGREDIENTS

12 yolks
300g sugar
500ml cream
500ml milk
2 vanilla beans

PREPARATION

- Separate the egg yolks
- Remove the seeds from the vanilla beans
- In a bowl, lightly whisk the yolks and sugar together
- Heat the cream, milk and vanilla seeds and pods until warm
- Add the egg mixture, whisking constantly until 82°C
- Pass through a fine strain
- Place in a bowl over an ice bath to cool down quickly
- Place in 2 pacojet containers and freeze overnight

Tip: Take care to not overheat the mixture, otherwise we will get an omelette!

2) WITH VANILLA ICE CREAM BASE, CREATE THE CREAMY CASHEW & CAREMEL FLAVOR

INGREDIENTS

200g toasted salted cashew nuts
250g sugar
Water
2 Pacojet containers vanilla ice cream

PREPARATION

- Place the cashew nuts in a baking tray with a graseproof paper
- Pacojet the vanilla ice cream and refrigerate
- Create wet caramel by

- Place the caramel mixture over the cashew nuts
- Let it cool down
- Coarsely grind in a food processor
- Mix with ice cream by hand avoiding over mix

Tip: Do not mix the sugar caramel, otherwise it will cristalize

3) CREATE SHELL / COOKIE WITH TAPIOCA

INGREDIENTS

pure Tapioca – this most Brazilian of foods ! In Brazil, cassava is called mandioca or aipim while its starch is called tapioca, a word derived from the word tipi'óka, its name in the Tupí language spoken by natives when the Portuguese first arrived in the Northeast Region of Brazil.This Tupí word refers to the process by which the cassava starch is made edible.
