Our kitchens are open spaces and made for visits, whether having guests in to enjoy cooking classes, or opening up the kitchen for 'staff days' as we did last week. On staff days we share all the latest evolutions in our menu and open the floor for ideas. Family recipes always welcome.
Pride in Bahian cooking is strong among the people of Trancoso. There's few regional cuisines in the world with such complex historical roots, with African slaves and Portuguese colonial traditions fused with Native American influences. We're always uncovering new histories and secrets. We love what we do and so does all our team, and it seems everyone wants to be a cook!
We don't have celebrity chefs at UXUA and we never will. This cooking is about community, and the simple joy of preparing together special food for family and friends.
